La Petite Maison's Bikini – The Method

WHere is an easy take on a drink featured on a new drinks list. This is a batch prepared mix that's packed with flavours associated with Christmas time, making it perfect for your holiday party. Reserve the remaining citrus syrup for brunch beverages, desserts, or to mix more rounds of this cocktail.

Bikini

Serves 10 people

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Syrup: Combine every components in a pan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, turn off the stove allowing it to cool down fully. Pour into a clean bottle, cap it and store in the fridge, where it will keep for up to four weeks.

For the Cocktail Base: Pour the specified spirits and syrup into a big jug, allow it to infuse for 60 minutes, then filter it best through cheesecloth, making it perfectly clear.

When ready to serve: Measure 85ml of your cocktail base to a stirring glass packed with ice, and agitate carefully for a minute until cold. Filter to a frosted cocktail glass or similar, decorate with the cranberries and finish with a quick spritz with the mandarin essence over the drink.
